In a large saucepan add 2 tablespoons olive oil over medium high heat. Add the sausage and brown on all sides, about 2 minutes.

Add in the onion, and stir to combine; saute together with sausage for about 3-4 minutes, until softened. Add oregano, thyme, paprika, black pepper, and pinch of salt, plus the garlic, and stir to combine.

Add the carrots, tomatoes, celery and potatoes, and stir to combine with the sausage and onion mixture. Add the chicken broth and bring to boil.

Reduce heat to medium-low, and simmer, uncovered, for 40 minutes.

Check if any additional seasoning is needed. Turn off heat and add kale and parsley. Stir to combine, allowing the kale to wilt into the soup for a few minutes before serving.

Serve hot with some bread.
