Indian Restaurant Style Rice

Ingredients

  • 2 cups rice
  • 8 cups water
  • 2 teaspoons salt
  • 2 cloves
  • 2 cardamom pods
  • One 2-inch piece of cinnamon
  • 1 star anise pod
  • 3 tablespoon vegetable oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon chili flakes
  • 15 curry leaves fresh or dry
  • 1 medium onion chopped
  • 3 chopped garlic cloves
  • 1/4 teaspoon turmeric

Instructions

  1. Rinse rice until the water runs clear. Soak rice for 30 minutes
  2. Boil water with salt. Drain rice and add to the boiling water;stir. Add the cinnamon stick, cloves, star anise pod and cardamom pods.Boil for 10 minutes or until rice is done to your liking.
  3. Add oil to a large skillet. Sauté mustard seeds, cumin, chili flakes and curry leaves until mustard seeds start to pop. Add onion and saute until onion is translucent.
  4. Add garlic and saute for another 2 minutes. Add the rice followed by turmeric.
  5. Cook for another 3-4 minutes, stirring often. Serve warm.
