Nyimo Salad
Ingredients

cooked nyimo
drained

cup
sliced red onion

grape tomatoes
sliced

diced cucumber

feta cheese
crumbled

fresh parsley

cup
diced mixed bell peppers
Dressing
1/4
cup
olive oil

tablespoons
red wine vinegar

teaspoon
cumin
salt & pepper
Instructions
Add salad ingredients in a bowl and gently toss to combine.
Refrigerate at least one hour before serving.
Drizzle with dressing if desired.
