Samp and Beans

Ingredients

  • 1 cup samp
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 green pepper chopped
  • 1 clove garlic minced
  • 1/2 cup chicken stock
  • 1 teaspoon Italian seasoning
  • 1 15.5-ounce can red kidney beans

Instructions

  1. Boil samp in water in a saucepan until tender.
  2. Add the olive oil to heavy bottom skillet on medium high heat.
  3. Add the onion and green pepper. Cook 5 minutes, or until the onions are translucent. Add the garlic and Italian seasoning. Cook until fragrant, about 1 minute.
  4. Add the cooked samp and beans. Stir. Add the stock and bring to a boil over medium-high heat. Reduce the heat to a simmer.
  5. Cover and cook for 12 to 15 minutes.
