Portuguese Style Maputi

Ingredients

  • 1 lb dried maize kernels
  • 4 cups water
  • 2 cups peanut oil
  • 3 tablespoons finely crushed salt

Instructions

  1. Sort dried kernels and soak in water overnight.
  2. Drain, pat kernels dry, and let air dry about an hour.
  3. Heat oil to around 350 degrees.
  4. Add kernels, in small batches, and cook until golden brown- about 10 minutes.
  5. Remove and place in paper towel lined bowl and season while still warm.
  6. Serve warm or cold.
