Baked Tilapia with Spicy Mango Salsa

Ingredients

  • Fish
    2 whole tilapia or snapper
    Marinate:
  • 4 jalapeno peppers
  • bunch of cilantro
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
    Mango Salsa
  • 2 ripe mangoes peeled, pitted and diced (about 3 cups)
  • 1 small red onion diced
  • 1/2 red pepper diced
  • 1 jalapeno pepper seeded and diced</span>
  • 1/2 cup chopped fresh cilantro

Instructions

  1. Make diagonal slashes along both sides of the fish.
  2. Place all marinade ingredients in a food processor and process into a paste. Spread mixture over both sides of the fish and marinade for 30 minutes.
  3. Preheat oven to 375F.
  4. Place fish in a foil lined baking sheet and cover with another foil sheet.
  5. Bake for 20 minutes. Remove the foil and broil for 5-8 minutes. Serve warm with Mango Salsa.
    Mango Salsa
  6. Toss all ingredients together until combined. Season with salt and pepper if needed.
  7. Serve immediately, or refrigerate in a sealed container for up to 3 days.
