Potato Chip Crusted Fish

Ingredients

  • 1 pound tilapia or any white fish cut into strips
  • 1 1/2 cups finely crushed potato chips
  • 1/2 cup all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1 egg
  • fresh parsley

Instructions

  1. Preheat oven to 450 F
  2. In a bowl, beat the egg. Add the fish and coat all the fish.
  3. Put the potato chips, all purpose flour, salt, cayenne pepper and black pepper in a large bowl. Stir. Remove each piece of fish from the egg, and dredge through the crumbs, pressing gently to adhere. Place on a prepared baking sheet. Repeat with all fish strips. You may need to use two pans to avoid overcrowding your fish. Lightly spray the fish with cooking spray.
  4. Bake for 10-12 minutes.
  5. Serve warm and garnish with chopped parsley.
