Fried rice

Ingredients

  • 2 tablespoons canola oil
  • 1 onion chopped
  • 1 carrot chopped
  • 1 bell pepper chopped
  • 1 cup frozen peas
  • 2 cloves crushed garlic
  • 2 tablespoons Thai yellow curry paste
  • 1 cup cooked chicken
  • 2 eggs
  • 2 cups cooked rice
  • 2 chopped scallions

Instructions

  1. <span class="mceItemHidden" data-mce-bogus="1"><span></span>Heat oil in a pan or wok, add all the vegetables and stir fry until softened. Add the curry paste and stir well.</span>
  2. <span></span>Toss in the chicken and make a well in the centre of the mixture. Add the eggs and stir well. Add the rice and stir-fry together until heated through and has absorbed all the flavours.
  3. Add the scallions and heat through
