Butternut Squash Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 chopped onion
  • 2 cloves crushed garlic
  • 1 chopped butternut squash
  • 2 cups chicken stock
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1/2 cup heavy cream

Instructions

  1. Sauté the onion in the olive oil in a saucepan.
  2. Add the garlic.
  3. Add the squash and chicken stock. Ass salt, pepper and thyme.Simmer until the squash is tender.
  4. Use an immersion blender to blend until smooth.
  5. Add the heavy cream and serve hot.
