Ingredients

  • 1 tablespoon olive oil
  • 1 small onion
  • 1 cup crushed tomatoes or diced tomatoes
  • 4 eggs
  • salt and pepper to taste

Instructions

  1. Fry onion in the olive oil until slightly browned.
  2. Add the tomatoes and simmer for 5 -10 minutes. Season with salt and pepper.
  3. Break and beat the eggs. Add the eggs to the tomato sauce and scramble.
  4. Serve with a slice of bread or toast.
