Blueberry Squash

Ingredients

  • 2 cup water filtered
  • 1 cup granulated sugar
  • 12 ounce fresh blueberries rinsed

Instructions

  1. In a small saucepan add water and sugar and cook on medium-high heat until sugar dissolves. Add blueberries and bring to a boil. Lower heat to simmer. Simmer for 25 minutes.

  2. Remove from heat and leave overnight to steep.

  3. Next day strain syrup over a clean bowl. Discard fruit. Clean the saucepan or use another and place the syrup back in the pan. Simmer for an additional 15 minutes. Cool and strain into clean jars. Keep in refrigerator for up to 1 week.

  4. Dilute with water in ratio 1:4 or as desired. Serve over ice if desired.
