Banana Fatcooks

When I got pregnant, I planned what I kind of mom I was going to be. Then Leo happened and turned that idea upside down. He is nothing like I expected what my child would be and what he would like. I think the only thing that we share are looks, judging by how many say we look like. I am not complaining, far from it, he has been such a pleasant surprise.

Leo does not necessarily like to eat what I like to eat and I have gone with the flow and at the same time keeping options available. He likes to stick to his favourites which makes packing his lunch easy because I stick to what I know he will eat. Which after some time will change. Sometime last year he decided bananas were not working out for him so he asked me not to pack them anymore. If I buy bananas he will just look at them even if his favourites are finished.

I had some overripe bananas and made some fatcooks with them. I did not offer the fatcooks to him because I figured he wouldn’t like them. Then he found them and said, “Mama these are yummy!”

I did not say anything when he was on the second one he figured they had banana in them and he said, “Mama these have banana in them, I don’t like bananas, can you finish it please?”

I wanted to tell him that he had already said it was yummy but figured he wasn’t hungry anymore, so I let it go. If you like banana bread or muffins you will like these in half the time.

Banana Fatcooks

Ingredients

  • 2 overripe bananas mashed
  • 1 cup flour
  • 2 eggs beaten
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoons cinnamon
  • cooking oil for frying

Instructions

  1. Mix all the dry ingredients in a bowl. Mix the mashed banana and egg, add to the dry ingredients until combined. Do not over mix.

  2. Heat oil in a saucepan to 350°F.

  3. Spoon the banana mixture into oil about 2 minutes on each side. Drain on a paper towel.

  4. Serve warm with tea.
