Boerewors Stew

Remember last week when I showed you how make your own Boerewors at home and sounded like I will not be making it often. This Boerewors Stew changed my mind.

I loooove one pot meals, it saves me time doing dishes. This has to be one of my best one pot meals yet. It tastes even better the next day.

I thawed my sausage and removed the plastic wrap. I used my wooden spoon to cut into bite size pieces. If your sausage has a casing you remove it unless you like it then just cut it into size bite pieces.

You start by browning the sausage then you add the vegetables, herbs and chicken broth. Then let the stew simmer for 45 minutes without the lid. The whole house will smell delicious. I like my stew to have chunky pieces. 

Boerewors Stew

Ingredients

  • 1 tablespoon olive oil
  • 1 lb Beef boerewors cut into chunks
  • 1 onion diced
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • ¼ paprika
  • ½ teaspoon black pepper
  • Pinch salt
  • 2 cloves garlic crushed
  • 2 medium-large carrots peeled and diced
  • 2 ribs celery diced
  • 1 to mato diced
  • 3 medium potatoes cubed
  • 5 cups chicken broth
  • 1 cup chopped kale
  • 1 tablespoons chopped parsley

Instructions

  1. In a large saucepan add 2 tablespoons olive oil over medium high heat. Add the sausage and brown on all sides, about 2 minutes.
  2. Add in the onion, and stir to combine; saute together with sausage for about 3-4 minutes, until softened. Add oregano, thyme, paprika, black pepper, and pinch of salt, plus the garlic, and stir to combine.
  3. Add the carrots, tomatoes, celery and potatoes, and stir to combine with the sausage and onion mixture. Add the chicken broth and bring to boil.
  4. Reduce heat to medium-low, and simmer, uncovered, for 40 minutes.
  5. Check if any additional seasoning is needed. Turn off heat and add kale and parsley. Stir to combine, allowing the kale to wilt into the soup for a few minutes before serving.
  6. Serve hot with some bread.
