Carrot Fries

I love roasted vegetables. They are easy to prepare and save time on busy nights. They make an excellent side dish too and can easily replace starch as a side dish if you are counting calories.

Recently we have been making a lot of carrot fries instead of potato fries. Carrot fries are nothing more than roasted carrots but cut to look like fries.

The recipe is really simple and will take about 5 minutes of preparation. Serve in place of potato fries and or with a dip of your choice

Carrot Fires

Ingredients

  • 4 large carrots cut into thin strips about 4" long
  • 2 tablespoons canola oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.

  2. Mix the cut carrots with the canola oil, salt, black pepper, garlic powder, and parsley,until well coated.

  3. Arrange the carrot sticks on the prepared baking sheet, spacing them out so they don’t touch.
  4. Bake for about 30 minutes on the top rack, stirring around to flip them over once halfway through.

  5. Serve carrot fries as replacement for potato fries. Best served immediately.
