Dried Mushrooms in Peanut Butter Sauce

One of my favourite foods is mushrooms, I can eat mushrooms everyday. I remember the first time I ate mushrooms they were dried mushrooms. My aunt made dried mushrooms and we ate them with sadza and I  loved them instantly! Recently my mother sent me some wild mushrooms, she knows me so well. People who live in rural Zimbabwe just go into the wild and pick them, I have never done it myself but I know not to eat mushrooms that grow in an area with Eucalyptus trees because they are poisonous. I do not know the science but one of those things I picked up.

Ingredients

1 cup dried wild mushrooms

1 tbsp olive oil

1 small onion

1 small tomato

1 tbsp peanut butter

salt and pepper

Instructions

If you have access to a clay pot try making these mushrooms in one.

Place one cup of dried mushrooms in a bowl.

Pour hot water over mushroom and leave to soak.

Fry the onion in olive oil until tender.

Add the tomatoes and cook until tender.

Add the peanut butter and add about a quarter cup of water.

Bring the sauce to boil on low heat.

Drain the mushrooms and add them to the peanut butter sauce.

Simmer on low heat for about fifteen minutes.

Serve with sadza or rice.
