Grilled Chicken Livers

I hope you had a great mother’s day. It was a beautiful day, the sun was out which was so much better than our Saturday. It was raining the whole day Saturday and I got wet when we were coming from church. Leo is always extra fussy in church and getting him into his car seat is tough, that is how I got wet. I feel silly for complaining about getting wet for a few minutes because some people walked in torrential rain across the island. This weekend was the annual end-to-end walk which is 24,1 miles/40km. The cycling was canceled but the walkers braved the rain. Yeah, I am never walking in the rain, on purpose!

This year our weather is just crazy. In previous years, it would be hot already but we have had days when it was warmer in New York than here in Bermuda. More than the cold weather, I have had enough of the rain. Actually I sometimes wish there would be some way of sending the rain to Zimbabwe. I just want to grill EVERYDAY! Why? Well,

  1. I enjoy grilling, almost feels the same as when we played mahumbwe(house)as kids.
  2. There are fewer dishes to clean.
  3. It is a healthy way of food preparation.

To make it even better, grill stuff on a stick. Any food on stick is great when you think about it, ice cream, lollipops, cake pops, kebabs and so on. I remember the first time I made kebabs at school, thinking this is so much fun. To make and to eat as well.

So I put chicken livers on a stick and grilled them. I buy chicken livers because I love them, for their price and are quick to cook. I season the chicken livers with salt and pepper put them on a stick and placed them on a hot grill.

They take a few minutes, say 4 on each side, to brown.

Serve them while they are still warm.

Grilled Chicken Livers

Ingredients

  • 1 lb. chicken livers
  • salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Put the livers on the skewers.
  2. Preheat your grill to extremely hot!
  3. Season the livers with salt and pepper and drizzle with olive oil.
  4. Grill for 4 minutes on each side.
