Homemade granola

I love breakfast more than any other meal of the day. I can skip lunch, breakfast never! It makes me feel like I can conquer what ever is on my to do list or take a nap the whole day. It has to be something hot like porridge and filling as well.

Sometimes I find myself in a rut where I am eating the same thing everyday and then it gets boring. I find myself giving myself a pep talk to make something different for breakfast. This is how I ended up making homemade granola. I always have oats at home so I decided why not. Sometimes I like my granola with nuts but most times I prefer it without. On the other hand I like raisins and other dried fruit in my granola al the time. It is really easy to make too.

You mix all the dry ingredients and them add the wet ingredients until all the oats are covered.

Preheat the oven to 350F. Spread the granola mix on a cookie sheet.

Bake for 5 minutes and stir. Bake for another five minutes and remove from the oven. I like my granola crispier so I let it sit in the oven for another 5 minutes. Place on wax paper to cool down.

Break the granola into clusters. Add the raisins or any dried fruit you may have.

I like to make a granola parfait using yoghurt and fruits. Yummy!

Servings 4 cups

Ingredients

  • 3 Cups old fashioned oats
  • 1/3 cup brown sugar
  • 1/2 teaspoon salt
  • 1/3 cup honey
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F.
  2. Mix all the dry ingredients in a bowl. Mix the wet ingredients and stir into the dry until all the oats are covered.
  3. Spread on a cookie sheet. Bake for 5 minutes and stir. Bake for another 5 minutes and remove from the oven. Place on a parchment paper and cool down.
  4. Add raisins.
  5. Serve with yoghurt or milk.
