Kapenta rice

When I started blogging about food, I was writing mostly about food that I grew up with. I really did not need to test the recipes. I knew the recipes b heart so all I really needed was to write. Over the years I began trying completely new recipes. Sometimes it just does not work. Then sometimes it takes a few years to get the recipe right.

Like this rice. The first time I tried it was a fail. I ate the rice but it was not something I would ever try again. I used many of the  and it didn’t taste good. The idea is to use the to flavour the rice in a similar way you add fish sauce to fried rice. 

I added curry powder to the rice. It just felt right. 

Kapenta Rice

Kapenta flavoured rice

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4

Ingredients

1 tablespoon olive oil

  • 1 onion chopped
  • 1 clove garlic
  • 1 tablespoon kapenta soaked
  • 1 teaspoon curry powder
  • 1 cup rice
  • 2 cups chicken stock
  • salt and pepper to taste

Instructions

  1. In large skillet, fry onion and garlic for about two minutes.

  2. Add kapenta and cook until browned. Add curry powder and salt and pepper to taste.

  3. Add the rice and fry a little and add the stock. Bring to a boil and reduce heat. Cook until the rice is cooked.

  4. Serve immediately.
