Madhumbe and Boerwors Balls

There is so much fresh seasonal food available at the moment.  I have not been in Zimbabwe during this season for nine years and I had forgotten how good everything tastes fresh from the source. I am most appreciative if the fact that a lot of the Zimbabwean food tastes good without doing a lot to it. But I would not be me if I did not try new recipes!

My mom loves madhumbe/taro root especially magogoya, the big ones. They are not as slimy as the small ones. I still do not like them as they are. I paired them with one of my favourites boerwors sausage. Boerwors sausage is one of those things that  I just have to eat when I come to Zimbabwe.

Madhumbe and Boerwors Balls

Ingredients

  • 1 lb boerwors sausage uncooked
  • 4 cups shredded taro root/ madhumbe cooked
  • 1 chopped onion
  • 1 chopped green bell pepper
  • 1 chopped yellow bell pepper
  • 1 chopped red bell pepper
  • 1 teaspoon italian seasoning
  • 1 teaspoon salt
  • 1 egg beaten
  • 1/2 cu breadcrumbs

Instructions

  1. Preheat oven to 400F.
  2. Mix all ingredients until well combined. Roll into 1 1/2-inch balls and place on a lined baking sheet. Bake for 20-25 minutes, or until brown.
  3. Sausage balls may be frozen uncooked. If baking frozen, add a few minutes to the baking time.
