Nyimo Salad

It feels like it has been forever since I wrote here. I have been working on some new knitting patterns and trying new things which I love. I am also in my head a lot but I love it.  This month will be different, I will post a lot more new content here than I did last month.

I have had this idea to make a salad with nyimo (Bambara nuts) for a while. When I thought about it the first time it was a no brainer idea and then kept procrastinating. Which makes no sense really, because this is an easy recipe except for the cooking of the nuts which takes FOREVER! While waiting for them to cook, I had a thought:

Would people buy canned nyimo like you do other legumes?

It would be convenient for making this salad, nyimo burger and whatever else I will think of in the future in case they actually became a thing.

Nyimo have an interesting flavor profile because you really do not need to season them. Which works for me since I do not like salt. I do not like the taste of salt so I put enough to give food some taste. Do you season nyimo?

Here is the recipe I used:

Nyimo Salad

Ingredients

  • 1 cup cooked nyimo drained
  • 1/4 cup sliced red onion
  • 2 cups grape tomatoes sliced
  • 2 cups diced cucumber
  • 1/2 cup feta cheese crumbled
  • 1/2 cup fresh parsley
  • 3/4 cup diced mixed bell peppers

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon cumin
  • salt & pepper

Instructions

  1. Add salad ingredients in a bowl and gently toss to combine.
  2. Refrigerate at least one hour before serving.
  3. Drizzle with dressing if desired.
