Nyimo(bambara nuts) dip

Remember last week when I was so happy the sun came out and it was warm. It did not last yesterday was the coldest day I have ever been in Bermuda, our temperatures were under 10 degrees Celsius. We are not used to such temperatures so it felt like it was freezing, Today is still cold but warmer.

I made a dip with nyimo! This was not my idea, Harriet from everydayharriet.com suggested it. Thank you for challenging me, Harriet.

I love nyimo but until now I have only had them boiled with some salt. Unlike beans they have such a deep flavour that after making this dip, I want to try other things with them. If it works I will post a few recipes soon.

This dip is so easy to make and so affordable because its only nyimo, garlic, cayenne pepper, yoghurt, salt and pepper

Nyimo(bambara nuts) dip

Ingredients

  • 1 cup cooked nyimo
  • 2 cloves garlic
  • salt and pepper to taste
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup greek yoghurt

Instructions

  1. Place everything in a blender and puree until smooth.
  2. Serve with chips and pretzels sticks.
