Peanut butter quinoa with chimukuyu and spinach

If you know anything about Zimbabwean food, then you know we put peanut butter in everything. Meat, rice, vegetables, porridge and as a snack.

I like quinoa, it is a great alternative to rice and cooked in the same way. This is how I came up with this recipe. We make peanut butter rice often, so I decided to do the same with quinoa.It is very easy you prepare, you make the quinoa by simmering one part quinoa and two parts water and then adding the peanut butter and a pinch of salt. Let the peanut butter cook in the steam for about five minutes and then stir it in until well blended.

Just like rice, you can eat peanut butter quinoa as is.

The rest of the meal I just made cooked it without a recipe. I cooked chimukuyu, much in the same way as in when I made it with peanut butter before but without the peanut butter. The spinach was simply sauteed in some oil and it was some of the best lunch I have ever made for myself.

My guess is that this would pretty much work with most grains. I am going to be trying this with some unmilled millet and sorghum.
