Sam, a friend from church, commented about how we(Zimbabweans) put peanut butter into everything. It had never dawned on me, but its true. You see in rural Zimbabwe, all the fields except for one “belong” to the husband; the one is left for the wife to grow peanuts, bambara groundnuts (nyimo), pumpkins and sweet potatoes. In my opinion the most important field. So today for lunch I decided to have collard greens in peanut sauce (muriwo unedovi). This recipe is so versatile you can use any greens you like as well as meat. The best way for me, is using mustard greens but you know to each his own. Here is the recipe:

Recipe : Muriwo unedovi (Greens in peanut sauce)

Ingredients

  • 5 leaves Collard Greens cut into ribbons
  • 1 tbsp Peanut butter
  • 1 tbsp Olive oil
  • Salt and Pepper
  • Red pepper flakes
  • 1 small onion chopped
  • 1 to mato chopped

Instructions

  1. Boil 1 cup salted water, add the greens and simmer for 8 minutes. Remove from pan and drain the water.
  2. Saute onions and tomatoes in the olive oil. Add peanut butter, season with salt and pepper. If you like your food spicy add the red pepper flakes here. Add quarter of a cup of water to the sauce, reduce heat to medium low and let it simmer for five minutes.
  3. Add back the greens and simmer for about two minutes.
  4. Serve with sadza or rice.
