Roasted Radishes

Towards the end of the summer, I planted some radishes. I don’t really like eating radishes but they are so beautiful to look at. So that is why I grew them. Just look at them!

Also, they are so easy to grow. It is a great starter crop if you are new to gardening. Whenever you start a new hobby, it helps to start with something easy it boosts your confidence. Even then it always important to remember that failure does happen, especially with plants.

While I enjoyed looking at the fruit, I could not let the radishes go to waste. So I decided to try something different, roasted radishes.

Simply slice the radishes, season them and roast in the oven.

Ingredients

  • 1 pound radishes sliced
  • 2 tablespoon olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, combine all the ingredients and mix well so that all the spices cover the radishes.

  3. Place on parchment paper-lined baking sheet.

  4. Roast for 25 – 30 minutes or until the radishes are fork-tender, and golden brown.

  5. Garnish with a bit of sour cream and serve.
