Vegetarian Chilli with Soya Mince

I am an adventist and in my country that would mean you eat soya mince or chunks. Not me! Most times I would rather eat plain rice or sadza than eat soya mince.  I do not like the texture and they can be bland. My husband has however been talking about them non stop since a friend brought them for us from home. To stop him from asking for them, I made them and I must say I was surprised I actually liked them. I am sharing this recipe hoping to convert someone else as well.

Method

Soak the soya mince in two cups of boiling water for ten minutes.

Drain the water.

Saute the onion, peppers, garlic, celery, and carrots in olive oil until the onion are soft. Add the soya mince, beans, tomatoes and the spices and stir. Add one cup of water and simmer for 30 minutes.

Serve on its own or with rice, sadza or chips.
