Blitz flour, salt and butter in a food processor. Add a little if needed to blend the dough. Mold the dough into a ball, place in a bowl and cover with plastic wrap. Place in a fridge for twenty minutes.
Roll out dough to fit a 9 inch pie dish. Drape the dough over the tin and gently ease it into the corners.
Filling
Preheat oven to 350 F
Layer the vegetables. Crack each of the eggs into a cup without breaking the yolk and add on top of the vegetables. Sprinkle with cheese. Season with salt and pepper.
Bake for 45 - 55 minutes. Wait 5 minutes before cutting into it to serve.
