Thai Chicken curry

Ingredients

  • 2 tablespoons canola oil
  • 1 onion chopped
  • 1 lb deboned and cubed chicken thighs
  • 3 - 4 tablespoons Thai curry paste
  • 1/2 cup crushed tomatoes
  • 3/4 cup coconut oil

Instructions

  1. Saute onion in oil.
  2. Add chicken and cook until lightly browned.
  3. Stir in curry paste, cook for one minute.
  4. Add tomatoes and coconut milk.
  5. Simmer uncovered until the chicken is cooked about twenty five minutes.
  6. Serve hot.
