Rice and Peas(Kidney Beans)

Ingredients

  • 1 teaspoon canola oil
  • 1 garlic clove crushed
  • 1/4 cup onion minced
  • 1 scallion chopped
  • 1 sprig fresh thyme
  • 1 cup cooked red kidney beans rinsed and drained
  • 1 cup rice
  • salt and pepper to taste
  • 1 cup water
  • 1 cup coconut milk

Instructions

  1. In saucepan, heat oil over medium heat; add garlic, scallion, onion and thyme. Sauté for a few minutes.
  2. Add rice, beans and stir.
  3. Add the coconut milk, water, salt and pepper in the pot, stir to combine and bring to a boil.
  4. Cover. Reduce heat to low and simmer for 25 minutes. Serve hot.
