Zucchini Fritters

Last week I decided to make some zucchini fritters for Leo. I found a recipe on Pinterest that looked good and healthy. After making them they were inedible, I am not sure whether I did something wrong or it is how they are supposed to be. Not to be outdone I tried them again in a different way all together and this time around they were good.

The first recipe I found used mashed potatoes and flour to bind the grated zucchini together, for these ones I used eggs and breadcrumbs. I also fried them in some oil which is not a healthy option but I wanted them to be well cooked. I suppose I could have baked the fritters but frying was faster.

This is an easy recipe. The fritters can be eaten as an appetizer or snack and I suppose it will come in in handy with toddlers too.

Zucchini Fritters

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 6

Ingredients

  • 2 medium zucchini grated
  • 1 cup breadcrumbs
  • 1/4 cup parmesan cheese grated,
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • 1 egg
  • salt and pepper to taste
  • 1/4 cup oil

Instructions

  1. Mix all the ingredients together except for the oil. Form into small patties.
  2. Heat oil on medium high heat in large skillet. Cook the patties about 5 minutes on each side or until browned.
  3. Serve warm.
