BBQ Chicken Naan Pizza


I make Naan bread using the whole recipe which makes eight loaves. We can not eat it all in one sitting so I freeze what we do not eat. This saves me time, when making dinner on one other day during the week. I usually do this on a Sunday in preparation for the week, so I will cut up any vegetables and put them in the fridge and freeze any leftovers that I can heat up when I need them.

Unlike a recipe that uses fresh pizza dough, using pre-cooked bread will result in a thin and crusty pizza.

For this recipe I used two naan loaves because that is all we would be able to eat today. If you are using frozen bread then you need to let it thaw before you are ready to cook.

Caramelise onions by placing them in a pan on medium heat with some olive oil and cook them really slow until they are browned. I love the taste of caramelised onions.

Divide the ingredients into two for the two loaves.You will place your loaves on baking sheet.
Toss two tablespoons of your favourite BBQ sauce (store-bought or homemade) with the cooked, chopped chicken to coat it. Set aside.
Top the bread with the BBQ sauce. Add more or less BBQ sauce depending on your taste.

Then layer half of the shredded mozzarella,

then the BBQ-coated chicken,

then the caramelised onion.

then the other half of the cheese

Bake for 14-16 minutes.
Slice pizza and serve immediately.

Ingredients

  • 2 loaves Naan Bread
  • 1/3 cup BBQ sauce
  • 1 cup cooked sliced chicken breast (about one 8-ounce breast)
  • 1 cup shredded mozzarella cheese
  • 1 caramelised onion thinly sliced

Instructions

  1. Make Naan bread using this recipe or you can buy it pre-cooked at the store.
  2. Preheat oven to 475F.
  3. Caramelise onion and set aside
  4. Toss two tablespoons of your favourite BBQ sauce with the cooked, chopped chicken to coat it. Set aside.

  6. Top the bread with the BBQ sauce. Add more or less BBQ sauce depending on your taste. Then layer half of the shredded mozzarella, then the BBQ-coated chicken, then the other half of the cheese, then the caramelised onion. Bake for 14-16 minutes.
