Carrot Rice

This rice is spicy and so tasty. Different from what I usually make. It is a great way to try something new with rice.

The carrots are finely grated and the turmeric which gives the rice the yellow colour makes it difficult to see the carrots since the colours are so similar. This was my first time using cumin seeds, I usually use the powder. The rice is so fragrant and reminded me of authentic Indian fragrances. The cumin seeds make the rice so spicy which we love.

First you need to make the rice and set it aside. Fried rice you fry the spices and vegetables together and then add to the rice off heat. Toss everything together and serve immediately.

Ingredients

  • 1 tablespoon canola oil
  • 3 cloves garlic
  • 1 teaspoon grated ginger
  • 1 teaspoon turmeric
  • 1 teaspoon cumin seeds
  • 1/4 cup raisins
  • 1 cup grated carrot
  • 1/2 sliced onion
  • cilantro leaves
  • Salt to taste
  • 1 cup cooked rice

Instructions

  1. Heat a pan with oil, add the garlic, ginger, cumin seeds and sauté until the raisins puff-up.
  2. Now add the onion, remaining salt and sauté till the onion turns translucent. Then, add the carrot and sauté until it turns pale in colour or until it is dry enough. Turn off the heat. Add the cilantro leaves.
  3. Place the carrot mixture on top of the rice and leave for about a minute. Mix it all together. Serve warm.
