Portuguese Sweet Rolls

I have been sitting here for 30 minutes trying to figure out what I am going to write and I just don’t have anything clever to start with. Hence this. This week was hard, not all of it but enough to make me feel drained. Things just did not work out. I made chicken cacciatore that did not taste right. But you know what, its Friday and I am still here, still standing.

Today I have Portuguese sweet rolls recipe that uses sweetened condensed milk. When we were kids it was one of those things that never lasted in my mom’s house, it just disappeared! The rolls are sweet but not too sweet and flaky.

I had so much fun making these, especially making the knot. I forgot to take pictures to show you how to do that. I will try to do one of those short videos next time I make them.

Here is the recipe that I used:

Portuguese Sweet Rolls

Ingredients

  • 4 tablespoons butter
  • 1/3 cup warm milk
  • 3 eggs slightly beaten
  • 2/3 cup sweetened condensed milk
  • cups all purpose flour
  • zest from ½ lemon
  • 2 tablespoons brown sugar
  • ½ teaspoon salt
  • 1 tablespoon active dry yeast
  • 1 egg for egg wash
  • sesame seeds

Instructions

  1. Add the yeast and brown sugar to warm milk in a bowl and stir well. Leave to activate about 10 minutes or until frothy.
  2. Add flour to the bowl of the mixer and add the lemon zest and salt to it.
  3. Add the melted butter, eggs and condensed milk to the yeast mixture and stir everything together.
  4. Pour the wet ingredients over the dry ingredients and mix for about 3 minutes. The dough will be pretty sticky and elastic.
  5. Let the dough rise and double in size in a warm place about an hour.
  6. Turn the dough over onto a clean surface, use flour if you need to. Knead the dough about five minutes. Form it into a long roll and cut into 12 pieces. Form into any shape roll you like. I made a knot.
  7. Preheat oven to 350 F degrees.
  8. Let the rolls sit for a about 10 minutes, so they rise a bit more. Brush with an egg wash and sprinkle with sesame seeds
  9. Bake for about 25 to 30 minutes.
