Potato Curry

The weather has been changing so much, one day it is warm and the next it is chilly. I do not really like summer because it gets too hot for my comfort but I also like for the chilly and wet weather to stop. Leo behaves better when I go outside for him to play. I do appreciate the tank water.

To beat this wet and kind of chilly weather I decided to make this potato curry. It is a common dish for breakfast. It is so good with fresh bread and tea. Sounds weird but I love it. It is an easy and inexpensive dish especially for brunch. For a lot of people in Zimbabwe, brunch is not by choice, combining breakfast and lunch saves them money. This is why the breakfast will be starch heavy to carry you throughout the day.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion
  • 1 tablespoon curry
  • 5 medium potatoes chopped
  • 1 cup crushed tomatoes
  • 1 cup vegetable stock
  • salt and pepper to taste

Instructions

  1. Saute onion in olive oil until slightly browned.
  2. Add curry powder and cook for a minute.
  3. Add potatoes coat with the onions.
  4. Add crushed tomatoes and vegetable stock. Season with salt and pepper. Simmer for 20 minutes.
  5. Serve immediately.

What an amazing, simple, delicious dish. I added a little Ginger Root and Fenugreek seed to your delicious recipe, not that it needed it.
