Once a month my mom buys her vegetables in bulk. Most are easy to keep for a month like potatoes and onions but tomatoes go bad really quickly after harvesting.We would freeze the tomatoes hole and then grate them when cooking.

Grating a frozen tomato is horrible! They are cold and it’s messy. My mama didn’t care because it was saving her m For whatever reason no one(in my family) thought of grating the tomatoes first and then freezing them. Such a DUH! moment.

To do this you will need to start with ripe tomatoes.

Boil water in a saucepan and add the tomatoes until the skin cracks.

Leave the tomatoes to cool down about 20 minutes, then peel off the skin.

Dice the tomatoes into whatever size you need.

Add about two cups to a ziplock (snap and seal) bag and lay flat in the freezer to save space. I measure two cups because that is how much I would need to make most of my stews otherwise measure what you wou would need.
