Sauteed Ground Beef and Kale

The last time I was home, I decided to make dinner so that when everyone came home from it would be ready. I found some ground beef in the fridge, in Zimbabwe we call it mince meat so I decided I was to mix it with some covo( looks and tastes similar to kale). Just before I started cooking my sister came home, she was horrified by my choice. I will never forget the look on her face.  She could not believe that after spending the whole day at work I expected her to eat ground beef. In Zimbabwe like in most places, ground beef is cheap and so it is looked down on but I love it. I love it for the price and for all the things that you can transform it into. Most dishes with ground beef are fast and tasty too.

My husband does not like a lot of foods, it gets boring at times but he is easy to please. I make him sadza every other day and he will be fine. I usually just mix it up with the protein and vegetables. His favourite is any meat mixed with leafy vegetables. Ground beef and kale mix is one of his favourites. It literally takes me less than twenty minutes to make the meal which works when I do not feel like slaving away at the stove, which is often.

Sauté onions, bell peppers and garlic in a skillet with olive oil for about 5 minutes.

Add ground beef and stir it in until browned.

Add cut kale and stir it until wilted. Season with salt and pepper. I like the kale a bit crispy so I serve immediately.

Ingredients

  • 1 tablespoon olive oil
  • 1 small chopped onion
  • 1/3 green bell pepper chopped
  • 1/3 yellow bell pepper chopped
  • 1/3 red bell pepper chopped
  • 1 crushed garlic clove
  • 1 lb ground beef
  • 5 leaves kale chopped
  • salt and pepper

Instructions

  1. In a skillet add the olive oil and saute onions, bell peppers and garlic. Saute for 5 minutes
  2. Add ground beef, stir it until browned.
  3. Add cut kale and stir it in until wilted. Season with salt and pepper.
  4. Serve immediately.

How much ground beef do you use? It is not in the ingredients list.

You know I love this recipe. It quick and simple and you are only limit by your imagination with flavor. Plus it healthy and figure friendly for you ladies. I love eating ground beef this way, way better than always patting it into a patty. I’m gonna add some taco seasoning and black beans to mine instead of the kale next time. Ill let you know how it goes.

I hate cooking… but this was do easy and tasty. I made a savory rice and mixed it all together. It was yummy.

Just tried this. Added garlic powder (had no cloves) and a touch of cayenne pepper and beef broth. DEFINITELY will make this again. Even husband liked it and he hates kale.

Sounds yummy… I’ll try this! Do you think it will be good to add bacon crisps to this? Trying to make this kale dish even more appetizing to my teenagers who hate kale. Thoughts?
